For the second installment of Roberta’s Recipes (for the background, go here), I am going with one that we make all the time around here. My bf has a habit of shopping with a fear that we might run out of something (god forbid), so he typically buys way more than we actually need. One example of this would be with bananas. We always end up a handful of bananas that are on their last leg, and must be used before they attract fruit flies, or get thrown away. Thus, we time and time again turn to Roberta’s Banana Bread Recipe. It is perfectly sweet, and lovely as both a breakfast bread or a dessert.
Banana Bread Recipe
1 C Sugar
1/4 C Melted Butter
3 Bananas, mashed
1 1/4 C Flour
1 tsp Baking Soda
1/2 tsp Salt
Chopped Nuts (optional)
Chocolate Chips (optional)
1. Heat oven to 350.
2. Combine sugar, butter, egg, and bananas.
3. Sift flour, baking soda, and salt together. Add to banana mixture.
4. Add nuts/chocolate, if using. Bake for 30-45 minutes, depending on stove.
With our stove, it takes the full 45 minutes (we have an older stove). I have made it with chocolate for a potluck, and everyone enjoyed it, but since my bf does not like chocolate (crazy, I know!), we typically make it without nuts or chocolate, and it can definitely stand alone without an frills. It is delicious, and I hope you enjoy it just as much as we do!
Note: The banana bread in the pics were made in a 8″x8″ pan. Ideally you would use a loaf pan, but we do not have one at the moment. It turns out just fine in this pan as well.
