Week 2 Recipe Reviews
Meatless Monday - Coconut Chickpeas and Spinach – I first made this recipe when I was experimenting with Veganism. Bret loved it, and always brings it up for me to make again, while I was not as blown away. It has a sweet and spiciness to it, and it is rather simple to make, as it is a one pot meal. I prefer to serve it over brown rice, but pasta would work just as well.

Tuesday – I was out.
Wednesday – Chicken and Broccoli Noodle Casserole – I have never been one to make casseroles (probably because years ago Bret mentioned he wasn’t a fan), but I am glad that I gave this one a shot. The recipe calls for shredded chicken, so to keep this step easy, just throw your chicken in the crockpot on low for 8 hours (or High for 4), and it’ll be falling apart by the time you need to add it to the dish. The cheesy sauce had a really great flavor, but our one critique of this recipe was that there wasn’t enough of everything. The recipe makes plenty of sauce, so I would definitely double the broccoli and noodles (possibly even the chicken too). Also, be prepared to do some dishes afterwards, as you’ll have the pasta pot, the broccoli saute pan, the pot you make the sauce in, and finally the casserole dish. I’d definitely make this recipe again with the changes, and just have Bret do the dishes.

Thursday – Bret was out.
Friday – Chicken Enchilada Stuffed Zucchini Boats – These were just about average. The chicken enchilada part had a pretty good taste, but nothing spectacular, and the zucchini boats were just a bit too soft/mushy for our taste. It is an inventive, healthy idea, and though I’m sure there is probably a way to make the zucchini less soft, I’ll probably not be making this one again.
*My Rating – 3 *Bret’s Rating – 3.5 *Kid Friendly – Probably not. It has chipotle peppers in it that gives it a lil’ spice.
Saturday – S’mores Dip – I went to a potluck on Saturday, and since I would be coming straight from a baby shower, I wanted a recipe that I could make quickly when I got there. This recipe literally takes 5 minutes to make, and is good (and very sweet). Though it didn’t quite have the s’mores flavor that I was longing for, you were still dipping your graham crackers into a chocolatey treat, so you can’t really go wrong with that. If you do choose to make this recipe, I’d just recommend a bit more marshmallow till it gets to your perfect s’more deliciousness.

I hope you are enjoying these recipe reviews, and they are aiding you in deciding what to make for your family. As you must have noticed in the title, I’m doing the Jillian Michael’s 7 Day Detox. I came across it on pinterest, and once reading that it is meant to help with bloating, I thought I would give it a go. Oh, and it also happened to mention you can lose 5 pounds in 7 days. Whether that is true or not, I guess we will find out. I’m on day 2 now, so look for the review of the detox next week.
